Sichuan Style Stir-Fried Chinese Long Beans

Ingredients
- 1 lb Chinese long beans
- 2 tbsp peanut oil
- 12 dried chilies
- 2 tsp Sichuan peppercorns
- ½ tsp salt
- 1 tsp sugar
- 2 tbsp sesame oil
- 2 tbsp soy sauce
Steps
- Trim the ends off the long beans and cut them into 2-inch pieces.
- Heat peanut oil in a wok or large sauté pan over high heat until shimmering.
- Add dried chilies and Sichuan peppercorns; stir-fry for 30 seconds until fragrant.
- Add long beans to the pan and stir-fry for 5-7 minutes, until tender-crisp and slightly blistered.
- Stir in salt and sugar, tossing to combine.
- Remove from heat, drizzle with sesame oil and soy sauce, and toss once more.
- Serve immediately as a side dish.
