Ingredients

  • 1 lb Chinese long beans
  • 2 tbsp peanut oil
  • 12 dried chilies
  • 2 tsp Sichuan peppercorns
  • ½ tsp salt
  • 1 tsp sugar
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce

Steps

  1. Trim the ends off the long beans and cut them into 2-inch pieces.
  2. Heat peanut oil in a wok or large sauté pan over high heat until shimmering.
  3. Add dried chilies and Sichuan peppercorns; stir-fry for 30 seconds until fragrant.
  4. Add long beans to the pan and stir-fry for 5-7 minutes, until tender-crisp and slightly blistered.
  5. Stir in salt and sugar, tossing to combine.
  6. Remove from heat, drizzle with sesame oil and soy sauce, and toss once more.
  7. Serve immediately as a side dish.
