Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 3 bell peppers (red, green, yellow)
  • 1 onion
  • 1 lime
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ¼ cup chicken broth
  • 8 flour tortillas (optional)
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)
  • 1 avocado (optional)
  • ¼ cup cilantro (optional)

Steps

  1. Slice bell peppers and onion into thin strips. Place them in the slow cooker.
  2. Cut chicken breasts into thin strips. In a small bowl, combine garlic powder, onion powder, chili powder, cumin, paprika, salt, and black pepper.
  3. Toss chicken with olive oil and the spice mixture until evenly coated. Add chicken to the slow cooker with the vegetables.
  4. Pour chicken broth over the ingredients. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is cooked through and vegetables are tender.
  5. Once cooked, shred the chicken slightly with two forks if desired, and squeeze fresh lime juice over the fajitas.
  6. Serve warm with tortillas and your favorite toppings like salsa, sour cream, avocado, and cilantro.
