Slow Cooker Chicken Fajitas

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 3 bell peppers (red, green, yellow)
- 1 onion
- 1 lime
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- ¼ cup chicken broth
- 8 flour tortillas (optional)
- ½ cup salsa (optional)
- ½ cup sour cream (optional)
- 1 avocado (optional)
- ¼ cup cilantro (optional)
Steps
- Slice bell peppers and onion into thin strips. Place them in the slow cooker.
- Cut chicken breasts into thin strips. In a small bowl, combine garlic powder, onion powder, chili powder, cumin, paprika, salt, and black pepper.
- Toss chicken with olive oil and the spice mixture until evenly coated. Add chicken to the slow cooker with the vegetables.
- Pour chicken broth over the ingredients. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is cooked through and vegetables are tender.
- Once cooked, shred the chicken slightly with two forks if desired, and squeeze fresh lime juice over the fajitas.
- Serve warm with tortillas and your favorite toppings like salsa, sour cream, avocado, and cilantro.
