Spaghetti with Spanish Flavors
A quick and flavorful pasta dish featuring spicy chorizo, sweet red peppers, and fresh parsley, all tossed with spaghetti and a touch of Parmesan.
Ingredients
- ½ lb Chorizo
- 12 oz Spaghetti
- 2 Red bell pepper
- ½ cup Fresh parsley
- 2 tbsp Olive oil
- ½ cup Parmesan cheese
- 1 tsp Salt
- ½ tsp Black pepper
Steps
- Bring a large pot of salted water to a rolling boil. Meanwhile, slice the chorizo into strips, finely chop the red peppers, and roughly chop the parsley.
- Add spaghetti to the boiling water and cook according to package directions, typically 8-10 minutes, or until al dente.
- While the pasta cooks, heat olive oil in a large frying pan over medium-high heat. Add chorizo and red peppers, cooking for 3-5 minutes until the chorizo is heated through and its oils color the pan.
- Before draining the pasta, reserve 1 cup of the starchy pasta water. Drain the spaghetti and add it directly to the frying pan with the chorizo and peppers.
- Stir in the chopped parsley and half of the Parmesan cheese. Add about 1/2 cup of the reserved pasta water, tossing well to create a light sauce.
- Serve immediately, offering extra Parmesan cheese at the table.
