Spaghetti with Spanish Flavors

Ingredients

  • ½ lb Chorizo
  • 12 oz Spaghetti
  • 2 Red bell pepper
  • ½ cup Fresh parsley
  • 2 tbsp Olive oil
  • ½ cup Parmesan cheese
  • 1 tsp Salt
  • ½ tsp Black pepper

Steps

  1. Bring a large pot of salted water to a rolling boil. Meanwhile, slice the chorizo into strips, finely chop the red peppers, and roughly chop the parsley.
  2. Add spaghetti to the boiling water and cook according to package directions, typically 8-10 minutes, or until al dente.
  3. While the pasta cooks, heat olive oil in a large frying pan over medium-high heat. Add chorizo and red peppers, cooking for 3-5 minutes until the chorizo is heated through and its oils color the pan.
  4. Before draining the pasta, reserve 1 cup of the starchy pasta water. Drain the spaghetti and add it directly to the frying pan with the chorizo and peppers.
  5. Stir in the chopped parsley and half of the Parmesan cheese. Add about 1/2 cup of the reserved pasta water, tossing well to create a light sauce.
  6. Serve immediately, offering extra Parmesan cheese at the table.
