Ingredients

  • 4 chicken thighs
  • 1½ onion
  • 1 tsp paprika
  • ½ lemon
  • ¼ cup fresh parsley
  • ¾ cup chicken broth
  • ½ tbsp olive oil
  • ½ tsp salt (optional)
  • ¼ tsp black pepper (optional)

Steps

  1. Preheat oven to 375F (190C).
  2. Thinly slice the onion. Zest and juice the lemon. Roughly chop the parsley.
  3. In a large ovenproof dish, combine chicken thighs, sliced onion, paprika, lemon zest, lemon juice, chicken broth, and olive oil. Season with salt and pepper.
  4. Mix all ingredients thoroughly with your hands to coat the chicken and onions.
  5. Bake for 45 minutes, stirring the onions halfway through (after 20-25 minutes), until the chicken is golden and cooked through, and the onions are tender.
  6. Garnish with fresh parsley before serving. Serve with rice, if desired.
