Spanish Chicken
A simple yet flavorful one-pan Spanish chicken dish featuring tender chicken thighs, sweet onions, bright lemon, and smoky paprika, perfect for a weeknight meal.
Ingredients
- 4 chicken thighs
- 1½ onion
- 1 tsp paprika
- ½ lemon
- ¼ cup fresh parsley
- ¾ cup chicken broth
- ½ tbsp olive oil
- ½ tsp salt (optional)
- ¼ tsp black pepper (optional)
Steps
- Preheat oven to 375F (190C).
- Thinly slice the onion. Zest and juice the lemon. Roughly chop the parsley.
- In a large ovenproof dish, combine chicken thighs, sliced onion, paprika, lemon zest, lemon juice, chicken broth, and olive oil. Season with salt and pepper.
- Mix all ingredients thoroughly with your hands to coat the chicken and onions.
- Bake for 45 minutes, stirring the onions halfway through (after 20-25 minutes), until the chicken is golden and cooked through, and the onions are tender.
- Garnish with fresh parsley before serving. Serve with rice, if desired.
