Spanish Chicken Pie
A hearty and flavorful Spanish-inspired pie featuring tender chicken, roasted peppers, and olives simmered in a rich tomato sauce, topped with a smoky paprika mashed potato crust.
Ingredients
- 500 g potatoes
- 1½ tsp paprika
- 1 tsp olive oil
- 1 onion
- 1 clove garlic
- 400 g tinned tomatoes
- 150 g chicken
- 70 g roasted red pepper
- ¼ cup green olives
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Preheat oven to 200C (180C fan/Gas 6). Boil potatoes for 15-20 minutes until tender. Drain, return to pan, then mash with half of the paprika and seasoning.
- Meanwhile, heat olive oil in a large pan. Fry sliced onion and minced garlic for a few minutes until softened.
- Stir in the remaining paprika for 1 minute, then add the tinned tomatoes and bring to a simmer.
- Transfer the tomato mixture to a large ovenproof dish. Stir in the chicken, roasted red peppers, green olives, and additional seasoning.
- Spoon the mashed potato mixture evenly over the chicken and tomato base.
- Bake for 15 minutes, or until the mashed potato topping is golden and the sauce is bubbling.
