Spanish Chicken Pie

A hearty and flavorful Spanish-inspired pie featuring tender chicken, roasted peppers, and olives simmered in a rich tomato sauce, topped with a smoky paprika mashed potato crust.

Ingredients

  • 500 g potatoes
  • 1½ tsp paprika
  • 1 tsp olive oil
  • 1 onion
  • 1 clove garlic
  • 400 g tinned tomatoes
  • 150 g chicken
  • 70 g roasted red pepper
  • ¼ cup green olives
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Preheat oven to 200C (180C fan/Gas 6). Boil potatoes for 15-20 minutes until tender. Drain, return to pan, then mash with half of the paprika and seasoning.
  2. Meanwhile, heat olive oil in a large pan. Fry sliced onion and minced garlic for a few minutes until softened.
  3. Stir in the remaining paprika for 1 minute, then add the tinned tomatoes and bring to a simmer.
  4. Transfer the tomato mixture to a large ovenproof dish. Stir in the chicken, roasted red peppers, green olives, and additional seasoning.
  5. Spoon the mashed potato mixture evenly over the chicken and tomato base.
  6. Bake for 15 minutes, or until the mashed potato topping is golden and the sauce is bubbling.
