Spanish Rice & Shrimp One-Pot
A flavorful one-pot Spanish dish featuring tender rice, savory chorizo, vibrant peppers, and succulent shrimp.
Ingredients
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 50 g chorizo
- 2 clove garlic
- 1 tbsp olive oil
- 250 g basmati rice
- 400 g canned diced tomatoes
- 200 g shrimp
Steps
- Heat olive oil in a non-stick frying pan or shallow pan with a lid over high heat.
- Add sliced onion, peppers, chorizo, and minced garlic; cook for 3 minutes, stirring frequently.
- Stir in the basmati rice and canned tomatoes, then add 500ml boiling water. Cover and cook over high heat for 12 minutes.
- Uncover and stir. The rice should be almost tender.
- Add shrimp and a splash more water if the rice appears dry. Cook for another minute until shrimp are pink and rice is fully tender.
- Serve immediately.
