Spanish Rice & Shrimp One-Pot

Ingredients

  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 50 g chorizo
  • 2 clove garlic
  • 1 tbsp olive oil
  • 250 g basmati rice
  • 400 g canned diced tomatoes
  • 200 g shrimp

Steps

  1. Heat olive oil in a non-stick frying pan or shallow pan with a lid over high heat.
  2. Add sliced onion, peppers, chorizo, and minced garlic; cook for 3 minutes, stirring frequently.
  3. Stir in the basmati rice and canned tomatoes, then add 500ml boiling water. Cover and cook over high heat for 12 minutes.
  4. Uncover and stir. The rice should be almost tender.
  5. Add shrimp and a splash more water if the rice appears dry. Cook for another minute until shrimp are pink and rice is fully tender.
  6. Serve immediately.
