Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 clove garlic
  • 250 g paella rice
  • 800 ml vegetable broth
  • 1 pinch saffron threads
  • 400 g frozen seafood mix
  • ½ lemon juice
  • ¼ cup fresh parsley (optional)

Steps

  1. Heat olive oil in a large saucepan over medium heat. Add chopped onion and soften for 6-7 minutes.
  2. Stir in chopped red and yellow bell peppers and sliced garlic; cook for 2 more minutes. Add paella rice and cook for 1 minute, stirring to coat.
  3. Pour in vegetable broth and add saffron. Bring to a boil, then reduce heat to a gentle bubble and cook uncovered for 20 minutes, stirring occasionally, until rice is tender.
  4. Stir in frozen seafood mix and lemon juice. Cook for 2 minutes, or until the seafood is piping hot and cooked through.
  5. Serve immediately in warm bowls, garnished with fresh parsley if desired.
