Spanish Seafood Rice
A vibrant and comforting Spanish rice dish packed with tender seafood, aromatic saffron, and colorful peppers.
Ingredients
- 1 tbsp olive oil
- 1 onion
- 1 red bell pepper
- 1 yellow bell pepper
- 2 clove garlic
- 250 g paella rice
- 800 ml vegetable broth
- 1 pinch saffron threads
- 400 g frozen seafood mix
- ½ lemon juice
- ¼ cup fresh parsley (optional)
Steps
- Heat olive oil in a large saucepan over medium heat. Add chopped onion and soften for 6-7 minutes.
- Stir in chopped red and yellow bell peppers and sliced garlic; cook for 2 more minutes. Add paella rice and cook for 1 minute, stirring to coat.
- Pour in vegetable broth and add saffron. Bring to a boil, then reduce heat to a gentle bubble and cook uncovered for 20 minutes, stirring occasionally, until rice is tender.
- Stir in frozen seafood mix and lemon juice. Cook for 2 minutes, or until the seafood is piping hot and cooked through.
- Serve immediately in warm bowls, garnished with fresh parsley if desired.
