Spiced Tortilla

A flavorful Spanish-inspired tortilla featuring potatoes, tomatoes, and a hint of spice, perfect for a light meal.

Ingredients

  • 1 tbsp sunflower oil
  • 1 onion
  • 1 red chili
  • 2 tsp curry powder
  • 300 g cherry tomatoes
  • 500 g potatoes
  • ½ bunch fresh cilantro
  • 8 eggs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 servings green salad (optional)

Steps

  1. Heat oil in a large oven-safe frying pan. Fry diced onion and half of the sliced red chili for 5 minutes until softened.
  2. Stir in curry powder and cook for 1 minute. Add cherry tomatoes and sliced potatoes (peeled if desired) to the pan along with chopped cilantro stalks.
  3. Whisk eggs with salt and pepper. Pour the seasoned eggs over the vegetables in the pan.
  4. Cook gently on the stovetop for 8-10 minutes until the tortilla is almost set.
  5. Preheat your grill or broiler. Flash the tortilla under the grill for 1-2 minutes until the top is fully set and lightly golden.
  6. Garnish with remaining fresh cilantro leaves and the other half of the sliced red chili.
  7. Slice into wedges and serve warm, optionally with a green salad.
