Spiced Tortilla
A flavorful Spanish-inspired tortilla featuring potatoes, tomatoes, and a hint of spice, perfect for a light meal.
Ingredients
- 1 tbsp sunflower oil
- 1 onion
- 1 red chili
- 2 tsp curry powder
- 300 g cherry tomatoes
- 500 g potatoes
- ½ bunch fresh cilantro
- 8 eggs
- ½ tsp salt
- ¼ tsp black pepper
- 4 servings green salad (optional)
Steps
- Heat oil in a large oven-safe frying pan. Fry diced onion and half of the sliced red chili for 5 minutes until softened.
- Stir in curry powder and cook for 1 minute. Add cherry tomatoes and sliced potatoes (peeled if desired) to the pan along with chopped cilantro stalks.
- Whisk eggs with salt and pepper. Pour the seasoned eggs over the vegetables in the pan.
- Cook gently on the stovetop for 8-10 minutes until the tortilla is almost set.
- Preheat your grill or broiler. Flash the tortilla under the grill for 1-2 minutes until the top is fully set and lightly golden.
- Garnish with remaining fresh cilantro leaves and the other half of the sliced red chili.
- Slice into wedges and serve warm, optionally with a green salad.
