Spicy Pork Belly

Ingredients

  • 1½ lb pork belly, skin on
  • 1 inch ginger
  • 4 clove garlic
  • ¼ cup soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sesame seeds (optional)
  • 2 stalk scallions (optional)
  • 1 tbsp cooking oil

Steps

  1. Cut pork belly into 1-inch thick pieces. In a large skillet, add pork belly and enough water to cover. Bring to a boil, then reduce heat and simmer for 20 minutes. Drain water and pat pork belly dry.
  2. Mince ginger and garlic. In a bowl, whisk together soy sauce, gochujang, honey, rice vinegar, sesame oil, minced ginger, and minced garlic to create the sauce.
  3. Heat cooking oil in the same skillet over medium-high heat. Add the par-boiled pork belly and cook until crispy and browned on all sides, about 10-15 minutes.
  4. Pour the prepared sauce over the crispy pork belly. Toss to coat evenly and cook for another 2-3 minutes until the sauce thickens and glazes the pork.
  5. Garnish with sesame seeds and sliced scallions, if desired, and serve immediately, ideally with steamed rice.
