Ingredients

  • 1 lb ground pork
  • 1 tbsp sesame oil
  • 3 clove garlic
  • 1 tbsp ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tsp brown sugar
  • 8 oz water chestnuts
  • 4 green onions
  • 1 head butter lettuce
  • ½ cup shredded carrots (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. Mince garlic and ginger. Drain and finely chop water chestnuts. Slice green onions, separating white and green parts.
  2. Heat sesame oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add minced garlic, ginger, and the white parts of the green onions to the skillet. Cook for 1-2 minutes until fragrant.
  4. Stir in soy sauce, rice vinegar, sriracha, and brown sugar. Add chopped water chestnuts. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
  5. Remove from heat and stir in the green parts of the green onions.
  6. Separate the butter lettuce leaves to create cups. Spoon the pork mixture into the lettuce cups.
  7. Garnish with shredded carrots and sesame seeds, if desired, and serve immediately.
