Steak Burrito

Ingredients

  • 1½ lb flank steak
  • 4 flour tortillas
  • 2 cup cooked rice
  • 15 oz canned black beans
  • ½ red onion
  • ¼ cup cilantro
  • 1 lime
  • 1 avocado (optional)
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)
  • 1 cup cheddar cheese (optional)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat the flank steak dry and season generously with chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the steak for 3-5 minutes per side for medium-rare, or until desired doneness. Remove from skillet, tent with foil, and let rest for 5-10 minutes before thinly slicing against the grain.
  3. While the steak rests, warm the black beans in the same skillet or a microwave. Warm tortillas according to package directions.
  4. Dice the red onion and chop the cilantro. Mash the avocado, if using, and squeeze lime juice over it.
  5. Assemble burritos: Lay out each tortilla and layer with cooked rice, black beans, sliced steak, red onion, cilantro, and any optional toppings like avocado, salsa, sour cream, or cheese.
  6. Fold in the sides of the tortilla, then roll up tightly from the bottom to create a sealed burrito.
