Ingredients

  • 1½ lb skirt steak
  • 3 bell peppers
  • 1 onion
  • 1 lime
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 8 flour tortillas
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)
  • 1 avocado (optional)

Steps

  1. Slice skirt steak against the grain into thin strips. Slice bell peppers and onion into thin strips.
  2. In a bowl, combine garlic powder, chili powder, cumin, paprika, oregano, salt, and pepper. Toss steak strips with half of the seasoning mix.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add seasoned steak and cook for 3-5 minutes until browned and cooked to your liking. Remove steak from skillet and set aside.
  4. Add remaining 1 tablespoon olive oil to the skillet. Add bell peppers and onion, and cook for 5-7 minutes until tender-crisp. Stir in the remaining seasoning mix.
  5. Return steak to the skillet with the vegetables. Squeeze fresh lime juice over the mixture and toss to combine.
  6. Warm tortillas according to package directions.
  7. Serve steak and vegetable mixture immediately with warm tortillas and desired toppings like salsa, sour cream, or sliced avocado.
