Sun-Dried Tomato Pasta
A flavorful and vibrant pasta dish featuring tender pasta tossed with sun-dried tomatoes, garlic, spinach, and a rich, savory sauce.
Ingredients
- 12 oz fettuccine
- ½ cup sun-dried tomatoes (oil-packed)
- 4 clove garlic
- 5 oz spinach
- ¾ cup heavy cream
- ½ cup Parmesan cheese, grated
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- ¼ cup fresh basil, chopped (optional)
Steps
- Cook fettuccine according to package directions in salted water. Reserve 1 cup of pasta water before draining.
- While pasta cooks, finely mince garlic and chop sun-dried tomatoes.
- Heat olive oil in a large skillet over medium heat. Add garlic and sun-dried tomatoes; sauté for 2-3 minutes until fragrant.
- Stir in heavy cream, salt, pepper, and red pepper flakes (if using). Bring to a gentle simmer.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes.
- Add drained pasta and grated Parmesan cheese to the skillet. Toss to coat, adding reserved pasta water a little at a time until the sauce reaches desired consistency.
- Serve immediately, garnished with fresh basil if desired.
