Sun-Dried Tomato Pasta

Ingredients

  • 12 oz fettuccine
  • ½ cup sun-dried tomatoes (oil-packed)
  • 4 clove garlic
  • 5 oz spinach
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup fresh basil, chopped (optional)

Steps

  1. Cook fettuccine according to package directions in salted water. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, finely mince garlic and chop sun-dried tomatoes.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and sun-dried tomatoes; sauté for 2-3 minutes until fragrant.
  4. Stir in heavy cream, salt, pepper, and red pepper flakes (if using). Bring to a gentle simmer.
  5. Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Add drained pasta and grated Parmesan cheese to the skillet. Toss to coat, adding reserved pasta water a little at a time until the sauce reaches desired consistency.
  7. Serve immediately, garnished with fresh basil if desired.
