Sweet and Sour Chicken
Enjoy crispy chicken and vibrant bell peppers coated in a tangy, sweet, homemade sauce with pineapple.
Ingredients
- 1 lb chicken thighs
- 1 egg white
- 1 tsp kosher salt
- 2 tsp cornstarch
- 10 oz pineapple chunks
- ¼ cup pineapple juice
- ¼ cup white vinegar
- ¼ cup tomato ketchup
- 3 tbsp brown sugar
- 4 tsp oil
- 1 red bell pepper
- 1 yellow bell pepper
- 1 tsp ginger
- 4 servings steamed rice (optional)
Steps
- In a bowl, combine chicken with egg white, 1/2 tsp kosher salt, and cornstarch. Stir to coat and let sit for 15 minutes.
- Whisk together pineapple juice, vinegar, ketchup, remaining 1/2 tsp kosher salt, and brown sugar to make the sweet and sour sauce.
- Heat 1 tbsp oil in a large frying pan or wok over high heat. Add chicken in a single layer and fry for 1 minute per side until browned, then remove to a plate.
- Reduce heat to medium, add remaining 1 tsp oil, then add bell peppers and ginger. Fry for 1 minute.
- Add pineapple chunks and the sweet and sour sauce to the pan. Increase heat to high and bring to a simmer.
- Return chicken to the pan and simmer for 1-2 minutes, until chicken is cooked through.
- Taste and adjust seasoning with more brown sugar or vinegar if desired.
- Serve hot, optionally with steamed rice.
