Sweet and Sour Chicken

Ingredients

  • 1 lb chicken thighs
  • 1 egg white
  • 1 tsp kosher salt
  • 2 tsp cornstarch
  • 10 oz pineapple chunks
  • ¼ cup pineapple juice
  • ¼ cup white vinegar
  • ¼ cup tomato ketchup
  • 3 tbsp brown sugar
  • 4 tsp oil
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 tsp ginger
  • 4 servings steamed rice (optional)

Steps

  1. In a bowl, combine chicken with egg white, 1/2 tsp kosher salt, and cornstarch. Stir to coat and let sit for 15 minutes.
  2. Whisk together pineapple juice, vinegar, ketchup, remaining 1/2 tsp kosher salt, and brown sugar to make the sweet and sour sauce.
  3. Heat 1 tbsp oil in a large frying pan or wok over high heat. Add chicken in a single layer and fry for 1 minute per side until browned, then remove to a plate.
  4. Reduce heat to medium, add remaining 1 tsp oil, then add bell peppers and ginger. Fry for 1 minute.
  5. Add pineapple chunks and the sweet and sour sauce to the pan. Increase heat to high and bring to a simmer.
  6. Return chicken to the pan and simmer for 1-2 minutes, until chicken is cooked through.
  7. Taste and adjust seasoning with more brown sugar or vinegar if desired.
  8. Serve hot, optionally with steamed rice.
