Ingredients

  • 4 carrots
  • ½ red cabbage
  • 2 red onions
  • ¼ cup fresh mint
  • ¼ cup fresh cilantro
  • ¼ cup roasted peanuts
  • 4 tbsp lime juice
  • 1 tbsp peanut oil
  • 1 red chili
  • 1 tbsp brown sugar

Steps

  1. Thinly slice carrots, red cabbage, and red onions. Place them in a large mixing bowl.
  2. In a small bowl, whisk together lime juice, peanut oil, chopped red chili, and brown sugar until the sugar dissolves to create the dressing.
  3. Pour the dressing over the sliced vegetables and toss well to coat evenly.
  4. Roughly chop fresh mint and cilantro. Add them to the salad and toss gently.
  5. Serve immediately, topped with roasted peanuts.
