Tangy Carrot, Cabbage & Onion Salad

Ingredients
- 4 carrots
- ½ red cabbage
- 2 red onions
- ¼ cup fresh mint
- ¼ cup fresh cilantro
- ¼ cup roasted peanuts
- 4 tbsp lime juice
- 1 tbsp peanut oil
- 1 red chili
- 1 tbsp brown sugar
Steps
- Thinly slice carrots, red cabbage, and red onions. Place them in a large mixing bowl.
- In a small bowl, whisk together lime juice, peanut oil, chopped red chili, and brown sugar until the sugar dissolves to create the dressing.
