Tempeh Fajitas
Flavorful tempeh strips are seared with colorful bell peppers and onions, then seasoned with classic fajita spices for a delicious vegetarian meal.
Ingredients
- 16 oz tempeh
- 3 bell peppers
- 1 yellow onion
- 1 lime
- 2 tbsp olive oil
- 1½ tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¾ tsp salt
- ¼ tsp black pepper
- 8 corn or flour tortillas
- ½ cup salsa (optional)
- 1 avocado (optional)
- ¼ cup fresh cilantro (optional)
Steps
- Slice tempeh into 1/4-inch thick strips. Cut bell peppers and onion into thin strips.
- In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper to make the fajita seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add tempeh strips and cook until golden brown, about 5-7 minutes, flipping occasionally. Remove tempeh from skillet and set aside.
- Add bell pepper and onion strips to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Return tempeh to the skillet with the vegetables. Sprinkle the fajita seasoning over the tempeh and vegetables, tossing to coat evenly. Cook for another 2-3 minutes.
- Squeeze fresh lime juice over the fajita mixture.
- Warm tortillas according to package directions. Serve the tempeh fajita mixture in warm tortillas with desired toppings like salsa, avocado, or cilantro.
