Teriyaki Salmon Bowls

Quick and flavorful teriyaki glazed salmon served over rice with fresh vegetables for a satisfying weeknight meal.

Ingredients

  • 1½ lb salmon fillets
  • ¾ cup teriyaki sauce
  • 1½ cup rice
  • 3 cup broccoli florets
  • 2 carrots
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds (optional)
  • 2 green onions (optional)

Steps

  1. Preheat oven to 400°F (200°C). Cook rice according to package directions.
  2. Pat salmon fillets dry and place them on a baking sheet. Brush generously with teriyaki sauce.
  3. Roast salmon for 12-15 minutes, or until cooked through and flaky.
  4. While salmon cooks, steam or sauté broccoli and sliced carrots until tender-crisp.
  5. In a small saucepan, simmer remaining teriyaki sauce until slightly thickened.
  6. Divide cooked rice among four bowls. Top with roasted salmon, steamed vegetables, and a drizzle of thickened teriyaki sauce.
  7. Garnish with sesame seeds and sliced green onions, if desired, and serve immediately.
