Teriyaki Salmon Bowls
Quick and flavorful teriyaki glazed salmon served over rice with fresh vegetables for a satisfying weeknight meal.
Ingredients
- 1½ lb salmon fillets
- ¾ cup teriyaki sauce
- 1½ cup rice
- 3 cup broccoli florets
- 2 carrots
- 1 tbsp sesame oil
- 1 tbsp sesame seeds (optional)
- 2 green onions (optional)
Steps
- Preheat oven to 400°F (200°C). Cook rice according to package directions.
- Pat salmon fillets dry and place them on a baking sheet. Brush generously with teriyaki sauce.
- Roast salmon for 12-15 minutes, or until cooked through and flaky.
- While salmon cooks, steam or sauté broccoli and sliced carrots until tender-crisp.
- In a small saucepan, simmer remaining teriyaki sauce until slightly thickened.
- Divide cooked rice among four bowls. Top with roasted salmon, steamed vegetables, and a drizzle of thickened teriyaki sauce.
- Garnish with sesame seeds and sliced green onions, if desired, and serve immediately.
