Ingredients

  • 16 oz extra-firm tofu
  • 4 cup broccoli florets
  • 2 cup carrots
  • 1 bell pepper
  • ½ cup soy sauce
  • ¼ cup mirin
  • 2 tbsp brown sugar
  • 3 clove garlic
  • 1 tbsp ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp sesame oil
  • 4 cup cooked rice
  • 1 tsp sesame seeds (optional)

Steps

  1. Press tofu to remove excess water, then cut into 1-inch cubes. Whisk together soy sauce, mirin, brown sugar, minced garlic, and grated ginger in a small bowl to make the teriyaki sauce.
  2. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook, flipping occasionally, until golden brown and crispy, about 8-10 minutes. Remove tofu and set aside.
  3. Add remaining 1 tablespoon sesame oil to the skillet. Add broccoli florets and sliced carrots, stir-fry for 3-5 minutes until slightly tender-crisp. Add sliced bell pepper and cook for another 2 minutes.
  4. Return tofu to the skillet with the vegetables. Whisk cornstarch with water to create a slurry, then add it to the teriyaki sauce.
  5. Pour the teriyaki sauce over the tofu and vegetables, stirring constantly until the sauce thickens and coats everything, about 1-2 minutes.
  6. Serve immediately over cooked rice, garnished with sesame seeds if desired.
