Teriyaki Tofu Stir-Fry
A quick and flavorful weeknight meal featuring pan-fried tofu and crisp vegetables coated in a savory teriyaki sauce.
Ingredients
- 16 oz extra-firm tofu
- 4 cup broccoli florets
- 2 cup carrots
- 1 bell pepper
- ½ cup soy sauce
- ¼ cup mirin
- 2 tbsp brown sugar
- 3 clove garlic
- 1 tbsp ginger
- 1 tbsp cornstarch
- 2 tbsp water
- 2 tbsp sesame oil
- 4 cup cooked rice
- 1 tsp sesame seeds (optional)
Steps
- Press tofu to remove excess water, then cut into 1-inch cubes. Whisk together soy sauce, mirin, brown sugar, minced garlic, and grated ginger in a small bowl to make the teriyaki sauce.
- Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook, flipping occasionally, until golden brown and crispy, about 8-10 minutes. Remove tofu and set aside.
- Add remaining 1 tablespoon sesame oil to the skillet. Add broccoli florets and sliced carrots, stir-fry for 3-5 minutes until slightly tender-crisp. Add sliced bell pepper and cook for another 2 minutes.
- Return tofu to the skillet with the vegetables. Whisk cornstarch with water to create a slurry, then add it to the teriyaki sauce.
- Pour the teriyaki sauce over the tofu and vegetables, stirring constantly until the sauce thickens and coats everything, about 1-2 minutes.
- Serve immediately over cooked rice, garnished with sesame seeds if desired.
