Tofu and Vegetable Skewers with Teriyaki Glaze

Ingredients
- 14 oz extra-firm tofu
- 2 bell peppers (red and yellow)
- 1 red onion
- 1 zucchini
- ¾ cup teriyaki sauce
- 1 tbsp sesame oil
- ½ tsp garlic powder
- ½ tsp ginger powder
- ¼ tsp salt
- ¼ tsp black pepper
- 8 wooden skewers
- 1 tsp sesame seeds (optional)
- 2 green onions (optional)
Steps
- Press the tofu to remove excess water, then cut into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes.
- Chop bell peppers, red onion, and zucchini into 1-inch pieces. In a large bowl, toss the tofu and vegetables with sesame oil, garlic powder, ginger powder, salt, and pepper.
- Thread the tofu and vegetables alternately onto the skewers. Reserve about 1/4 cup of teriyaki sauce for brushing.
- Preheat your grill to medium-high heat. Grill the skewers for 10-15 minutes, turning occasionally, until vegetables are tender-crisp and tofu is lightly browned.
- During the last 5 minutes of grilling, brush the skewers generously with the reserved teriyaki sauce, turning to coat all sides.
- Remove from grill and serve hot, garnished with sesame seeds and sliced green onions if desired.
