Ingredients

  • 14 oz extra-firm tofu
  • 2 bell peppers (red and yellow)
  • 1 red onion
  • 1 zucchini
  • ¾ cup teriyaki sauce
  • 1 tbsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp ginger powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 8 wooden skewers
  • 1 tsp sesame seeds (optional)
  • 2 green onions (optional)

Steps

  1. Press the tofu to remove excess water, then cut into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes.
  2. Chop bell peppers, red onion, and zucchini into 1-inch pieces. In a large bowl, toss the tofu and vegetables with sesame oil, garlic powder, ginger powder, salt, and pepper.
  3. Thread the tofu and vegetables alternately onto the skewers. Reserve about 1/4 cup of teriyaki sauce for brushing.
  4. Preheat your grill to medium-high heat. Grill the skewers for 10-15 minutes, turning occasionally, until vegetables are tender-crisp and tofu is lightly browned.
  5. During the last 5 minutes of grilling, brush the skewers generously with the reserved teriyaki sauce, turning to coat all sides.
  6. Remove from grill and serve hot, garnished with sesame seeds and sliced green onions if desired.
