Ingredients

  • 14 oz extra-firm tofu
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cup cooked brown rice
  • 15 oz canned black beans
  • 15 oz canned corn
  • 1 cup salsa
  • 1 avocado (optional)
  • 1 lime (optional)
  • ¼ cup fresh cilantro (optional)
  • ¼ red onion (optional)

Steps

  1. Press the tofu to remove excess water, then crumble or dice into small pieces.
  2. In a bowl, toss the tofu with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Heat a large skillet over medium-high heat. Add the seasoned tofu and cook for 8-10 minutes, stirring occasionally, until golden brown and slightly crispy.
  4. While tofu cooks, drain and rinse the black beans and corn. Warm them slightly in a microwave or small saucepan.
  5. Assemble the bowls: divide the cooked brown rice among 4 bowls. Top with the cooked tofu, black beans, corn, and salsa.
  6. Garnish with sliced avocado, a squeeze of fresh lime juice, chopped cilantro, and diced red onion, if desired.
