Tonkatsu Pork
Crispy, golden-fried pork cutlets served with a tangy homemade tonkatsu sauce, a classic Japanese comfort food.
Ingredients
- 4 pork chops
- ½ cup all-purpose flour
- 2 eggs
- ½ cup breadcrumbs
- 2 cup vegetable oil
- 2 tbsp ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp oyster sauce
- 2 tbsp granulated sugar
- 1 tsp salt
- ½ tsp black pepper
Steps
- Trim excess fat from pork chops, then pound each chop between parchment paper to 1cm thickness. Reshape the meat with your hands.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Season the pork chops with salt and pepper.
- Dredge each pork chop first in flour, shaking off excess, then dip in egg, and finally coat thoroughly in breadcrumbs.
- Heat vegetable oil in a large frying pan to 350F (180C), ensuring it's about 2cm deep.
- Fry two pork chops at a time for 1 minute 30 seconds per side, until golden brown and cooked through. Remove and rest on a wire rack for 5 minutes. Repeat with remaining chops.
- While pork rests, whisk together ketchup, Worcestershire sauce, oyster sauce, and granulated sugar for the tonkatsu sauce. Add a splash of water if needed to thin.
- Slice the rested tonkatsu into strips and serve immediately, drizzled with the homemade sauce.
