Torrijas
A Spanish classic, these delightful 'Spanish French toast' slices are soaked in a citrus-infused milk mixture, fried until golden, and drizzled with honey for a comforting breakfast or dessert.
Ingredients
- 2 tsp orange zest
- 1 tsp lemon zest
- 4 cup whole milk
- ½ cup granulated sugar
- 1 cinnamon stick
- ⅓ cup dry sherry
- 1 day-old baguette
- 1 cup olive oil
- 4 large eggs
- ¼ cup honey (optional)
Steps
- Grate the zest from the orange and lemon into a medium saucepan. Add milk, sugar, and cinnamon stick. Bring to a boil over medium heat, then remove from heat and stir in sherry. Let cool.
- Slice the baguette into 1-inch thick pieces and arrange them in a single layer on a baking sheet. Pour the cooled milk mixture over the bread, letting it soak for 5 minutes, then flip and soak for 5 more minutes.
- Whisk eggs in a shallow bowl. Heat olive oil in a large frying pan over medium-high heat until shimmering.
- Dip each soaked bread slice into the whisked egg, coating both sides and letting excess drip off.
- Place bread slices in the hot pan without overcrowding. Fry for about 4 minutes per side, until golden brown.
- Transfer fried torrijas to a paper towel-lined plate to drain excess oil. Repeat with remaining bread.
- Drizzle with honey before serving.
