Turkey Fried Rice
A quick and satisfying one-pan meal, this turkey fried rice is packed with vegetables and savory flavors, perfect for a weeknight dinner.
Ingredients
- 1 lb ground turkey
- 4 cup cooked white rice, day-old
- 1½ cup frozen mixed vegetables (peas, carrots, corn)
- 2 large eggs
- 4 tbsp soy sauce
- 1 tbsp sesame oil
- 2 clove garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- 2 green onions, sliced (optional)
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set turkey aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
- Push the garlic and ginger to one side of the skillet. Crack eggs into the empty space and scramble until just set, then break into smaller pieces and mix with the garlic and ginger.
- Add the day-old cooked rice and frozen mixed vegetables to the skillet. Stir well to combine with the egg mixture. Cook for 3-5 minutes, stirring occasionally, until rice is heated through and slightly crispy.
- Stir in the cooked ground turkey, soy sauce, and sesame oil. Toss everything together until well combined and heated through.
- Serve hot, garnished with sliced green onions if desired.
