Turkey Parmesan

A lighter take on a classic, this Turkey Parmesan features tender turkey cutlets baked with marinara sauce and melty mozzarella cheese.

Ingredients

  • 1½ lb turkey cutlets
  • ½ cup all-purpose flour
  • 2 eggs
  • 1½ cup Italian breadcrumbs
  • ½ cup Parmesan cheese, grated
  • 24 oz marinara sauce
  • 1½ cup mozzarella cheese, shredded
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Preheat oven to 375°F (190°C). Pound turkey cutlets to about 1/4 inch thickness if needed.
  2. Set up a breading station: one shallow dish with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/4 cup grated Parmesan cheese, salt, and pepper. Dredge each turkey cutlet in flour, then egg, then breadcrumbs, ensuring full coating.
  3. Heat olive oil in a large skillet over medium-high heat. Pan-fry turkey cutlets for 2-3 minutes per side until golden brown. They don't need to be cooked through.
  4. Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the browned turkey cutlets in a single layer over the sauce.
  5. Top each cutlet with more marinara sauce, then sprinkle generously with shredded mozzarella and the remaining 1/4 cup grated Parmesan cheese.
  6. Bake for 15-20 minutes, or until the cheese is melted and bubbly and the turkey is cooked through. If desired, broil for the last 1-2 minutes for a golden-brown crust.
  7. Garnish with fresh parsley if using, and serve immediately.
