Ingredients
- 3 bell peppers (assorted colors)
- 1 red onion
- 1 zucchini
- 8 oz cremini mushrooms
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 lime
- 8 corn tortillas
- 1 avocado (optional)

Steps
