Ingredients

  • 3 bell peppers (assorted colors)
  • 1 red onion
  • 1 zucchini
  • 8 oz cremini mushrooms
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime
  • 8 corn tortillas
  • 1 avocado (optional)
  • ½ cup salsa (optional)
  • ¼ cup fresh cilantro (optional)

Steps

  1. Slice bell peppers, red onion, zucchini, and mushrooms into thin strips.
  2. In a small bowl, combine chili powder, cumin, paprika, garlic powder, salt, and black pepper to make the fajita seasoning.
  3. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  4. Add the sliced vegetables to the hot skillet and sprinkle with the fajita seasoning. Cook, stirring occasionally, for 8-10 minutes until the vegetables are tender-crisp and slightly charred.
  5. Squeeze fresh lime juice over the cooked vegetables.
  6. Warm tortillas according to package directions.
  7. Serve the vegetable fajitas immediately with warm tortillas and optional toppings like sliced avocado, salsa, and fresh cilantro.
