Vegetarian Yaki Udon
A savory and satisfying Japanese stir-fried udon noodle dish with tender vegetables and a sweet-savory sauce.
Ingredients
- 500 g udon noodles
- 2 tbsp sesame oil
- 1 onion
- ½ head cabbage
- 20 shiitake mushrooms
- 8 scallions
- 4 tbsp mirin
- 2 tbsp soy sauce
- 1 tbsp granulated sugar
- 1 tbsp Worcestershire sauce
Steps
- Cook udon noodles according to package directions until al dente; drain and set aside.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
- Add sliced onion and chopped cabbage to the skillet and sauté for 5 minutes until softened.
- Stir in the shiitake mushrooms and half of the chopped scallions, cooking for another minute.
- Add the remaining sesame oil and the cooked udon noodles to the skillet. Stir-fry until the noodles are heated through.
- In a small bowl, whisk together mirin, soy sauce, granulated sugar, and Worcestershire sauce.
- Pour the sauce over the noodles and vegetables, tossing to coat well. Continue stir-frying until the sauce thickens and coats the noodles.
- Serve immediately, garnished with the remaining fresh scallions.
