Veggie Burrito Bowl

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 15 oz black beans
  • 1 cup corn kernels
  • ½ red onion
  • 2 tomato
  • 1 jalapeño (optional)
  • ¼ cup cilantro
  • 1 lime
  • 2 avocado
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Cook brown rice according to package instructions. While rice cooks, prepare other ingredients.
  2. Drain and rinse black beans. In a small pot, combine beans, corn, chili powder, cumin, garlic powder, salt, and pepper. Heat gently over medium-low heat.
  3. Dice red onion, tomatoes, and jalapeño (if using). Chop cilantro. In a bowl, combine diced vegetables and cilantro to make a fresh salsa. Squeeze half a lime over the salsa.
  4. Slice avocados. In a separate small bowl, mash one avocado with a squeeze of lime juice and a pinch of salt for a quick guacamole.
  5. Once rice is cooked, fluff with a fork. To assemble bowls, divide rice among 4 bowls. Top with seasoned black beans and corn.
  6. Add a generous spoonful of fresh salsa and a scoop of mashed avocado to each bowl. Garnish with extra cilantro and lime wedges, if desired.
