Veggie Burrito Bowl
A vibrant and satisfying vegetarian burrito bowl packed with seasoned rice, beans, corn, fresh salsa, and creamy avocado.
Ingredients
- 1 cup brown rice
- 2 cups water
- 15 oz black beans
- 1 cup corn kernels
- ½ red onion
- 2 tomato
- 1 jalapeño (optional)
- ¼ cup cilantro
- 1 lime
- 2 avocado
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Cook brown rice according to package instructions. While rice cooks, prepare other ingredients.
- Drain and rinse black beans. In a small pot, combine beans, corn, chili powder, cumin, garlic powder, salt, and pepper. Heat gently over medium-low heat.
- Dice red onion, tomatoes, and jalapeño (if using). Chop cilantro. In a bowl, combine diced vegetables and cilantro to make a fresh salsa. Squeeze half a lime over the salsa.
- Slice avocados. In a separate small bowl, mash one avocado with a squeeze of lime juice and a pinch of salt for a quick guacamole.
- Once rice is cooked, fluff with a fork. To assemble bowls, divide rice among 4 bowls. Top with seasoned black beans and corn.
- Add a generous spoonful of fresh salsa and a scoop of mashed avocado to each bowl. Garnish with extra cilantro and lime wedges, if desired.
