Ingredients

  • 3 bell peppers (various colors)
  • 1 onion
  • 8 oz cremini mushrooms
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime
  • 8 flour or corn tortillas
  • ½ cup salsa (optional)
  • ½ cup guacamole (optional)
  • ¼ cup fresh cilantro (optional)

Steps

  1. Slice bell peppers and onion into strips. Slice mushrooms.
  2. In a small bowl, combine chili powder, cumin, paprika, garlic powder, oregano, salt, and pepper to make the fajita seasoning.
  3. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  4. Add bell peppers, onion, and mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. Sprinkle the fajita seasoning over the vegetables and toss to coat. Cook for another 2-3 minutes until fragrant.
  6. Squeeze fresh lime juice over the vegetables. Warm tortillas according to package directions.
  7. Serve the veggie fajitas immediately with warm tortillas and optional toppings like salsa, guacamole, and fresh cilantro.
