Veggie Fajitas
Sizzling and flavorful, these veggie fajitas are packed with colorful bell peppers, onions, and mushrooms, perfectly seasoned and served with warm tortillas.
Ingredients
- 3 bell peppers (various colors)
- 1 onion
- 8 oz cremini mushrooms
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 lime
- 8 flour or corn tortillas
- ½ cup salsa (optional)
- ½ cup guacamole (optional)
- ¼ cup fresh cilantro (optional)
Steps
- Slice bell peppers and onion into strips. Slice mushrooms.
- In a small bowl, combine chili powder, cumin, paprika, garlic powder, oregano, salt, and pepper to make the fajita seasoning.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add bell peppers, onion, and mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
- Sprinkle the fajita seasoning over the vegetables and toss to coat. Cook for another 2-3 minutes until fragrant.
- Squeeze fresh lime juice over the vegetables. Warm tortillas according to package directions.
- Serve the veggie fajitas immediately with warm tortillas and optional toppings like salsa, guacamole, and fresh cilantro.
