Veggie Quesadillas
These cheesy veggie quesadillas are a quick and satisfying meal, packed with colorful vegetables and perfect for a weeknight dinner.
Ingredients
- 8 flour tortillas
- 2 cup cheddar cheese
- 1 bell pepper
- ½ onion
- 1 zucchini
- ½ cup corn kernels
- ½ can black beans
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
Steps
- Dice the bell pepper, onion, and zucchini into small pieces. Drain and rinse the black beans.
- Heat olive oil in a large skillet over medium heat. Add the diced bell pepper, onion, and zucchini and cook for 5-7 minutes until softened.
- Stir in the corn kernels, black beans, salt, and pepper. Cook for another 2-3 minutes. Remove the vegetable mixture from the skillet and set aside.
- Wipe the skillet clean. Place one tortilla in the skillet over medium heat. Sprinkle half of one side with shredded cheese, then spoon a portion of the vegetable mixture over the cheese.
- Sprinkle more cheese over the vegetables, then fold the other half of the tortilla over to create a half-moon shape.
- Cook for 2-3 minutes per side, until the tortilla is golden brown and the cheese is melted and bubbly.
- Repeat with the remaining tortillas and filling. Slice each quesadilla into wedges.
- Serve hot with sour cream and salsa, if desired.
