Veggie Quesadillas

These cheesy veggie quesadillas are a quick and satisfying meal, packed with colorful vegetables and perfect for a weeknight dinner.

Ingredients

  • 8 flour tortillas
  • 2 cup cheddar cheese
  • 1 bell pepper
  • ½ onion
  • 1 zucchini
  • ½ cup corn kernels
  • ½ can black beans
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)

Steps

  1. Dice the bell pepper, onion, and zucchini into small pieces. Drain and rinse the black beans.
  2. Heat olive oil in a large skillet over medium heat. Add the diced bell pepper, onion, and zucchini and cook for 5-7 minutes until softened.
  3. Stir in the corn kernels, black beans, salt, and pepper. Cook for another 2-3 minutes. Remove the vegetable mixture from the skillet and set aside.
  4. Wipe the skillet clean. Place one tortilla in the skillet over medium heat. Sprinkle half of one side with shredded cheese, then spoon a portion of the vegetable mixture over the cheese.
  5. Sprinkle more cheese over the vegetables, then fold the other half of the tortilla over to create a half-moon shape.
  6. Cook for 2-3 minutes per side, until the tortilla is golden brown and the cheese is melted and bubbly.
  7. Repeat with the remaining tortillas and filling. Slice each quesadilla into wedges.
  8. Serve hot with sour cream and salsa, if desired.
