Ingredients

  • ½ lb rice noodles
  • ½ lb sugar snap peas
  • 2 tsp sesame oil
  • 4 green onions
  • ½ cup fresh cilantro
  • ¾ lb hot smoked salmon
  • 6 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp peanut oil
  • 2 clove garlic
  • 1 inch fresh ginger
  • 1 serving pretzels (optional)

Steps

  1. Place rice noodles in a large bowl, cover with boiling water, and add sugar snap peas. Let sit for 4 minutes, then drain, rinse with cold water, and drain again.
  2. Toss the cooled noodles and sugar snap peas with sesame oil in a large bowl.
  3. In a small bowl, whisk together soy sauce, honey, lemon juice, peanut oil, finely chopped garlic, and grated ginger to make the dressing.
  4. Add sliced green onions, fresh cilantro, and flaked hot smoked salmon to the noodle mixture.
  5. Pour the dressing over the noodles and toss everything gently to combine.
  6. Serve immediately, optionally with pretzels or a bread roll on the side.
