Vietnamese Noodle Bowl Salad with Salmon

Ingredients
- ½ lb rice noodles
- ½ lb sugar snap peas
- 2 tsp sesame oil
- 4 green onions

- ¾ lb hot smoked salmon
- 6 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp lemon juice
- 2 tbsp peanut oil
- 2 clove garlic
- 1 inch fresh ginger

Steps
- Place rice noodles in a large bowl, cover with boiling water, and add sugar snap peas. Let sit for 4 minutes, then drain, rinse with cold water, and drain again.
- Toss the cooled noodles and sugar snap peas with sesame oil in a large bowl.
- In a small bowl, whisk together soy sauce, honey, lemon juice, peanut oil, finely chopped garlic, and grated ginger to make the dressing.
- Add sliced green onions, fresh cilantro, and flaked hot smoked salmon to the noodle mixture.
- Pour the dressing over the noodles and toss everything gently to combine.
- Serve immediately, optionally with pretzels or a bread roll on the side.
