Vietnamese-Style Caramel Pork

Ingredients

  • 1½ tbsp peanut oil
  • 1⅛ lb pork shoulder steaks
  • 2 shallots
  • 1 tbsp ground ginger
  • 1 red chili
  • ⅓ cup brown sugar
  • 1 tbsp fish sauce
  • 2 tsp chili sauce
  • 4 green onions
  • 4 servings steamed rice
  • 4 servings bok choy (optional)

Steps

  1. Heat 1 tablespoon of peanut oil in a wok or large skillet over high heat. Brown the pork in batches, then remove and set aside.
  2. Reduce heat to low, add remaining oil, shallots, ginger, and chili. Cook for 2 minutes until softened.
  3. Stir in brown sugar, fish sauce, and 0.8 cup (200ml) water. Bring to a boil, stirring until sugar dissolves.
  4. Return pork to the pan. Boil vigorously for 8-10 minutes, until the sauce thickens and coats the meat.
  5. Stir in chili sauce and adjust fish sauce to taste.
  6. Garnish with chopped green onions and serve immediately with steamed rice and bok choy, if desired.
