Vietnamese-Style Caramel Pork
Savor the rich, sweet, and savory flavors of tender pork shoulder coated in a glossy caramel sauce, brightened with ginger and chili.
Ingredients
- 1½ tbsp peanut oil
- 1⅛ lb pork shoulder steaks
- 2 shallots
- 1 tbsp ground ginger
- 1 red chili
- ⅓ cup brown sugar
- 1 tbsp fish sauce
- 2 tsp chili sauce
- 4 green onions
- 4 servings steamed rice
- 4 servings bok choy (optional)
Steps
- Heat 1 tablespoon of peanut oil in a wok or large skillet over high heat. Brown the pork in batches, then remove and set aside.
- Reduce heat to low, add remaining oil, shallots, ginger, and chili. Cook for 2 minutes until softened.
- Stir in brown sugar, fish sauce, and 0.8 cup (200ml) water. Bring to a boil, stirring until sugar dissolves.
- Return pork to the pan. Boil vigorously for 8-10 minutes, until the sauce thickens and coats the meat.
- Stir in chili sauce and adjust fish sauce to taste.
- Garnish with chopped green onions and serve immediately with steamed rice and bok choy, if desired.
