Ingredients

  • 4 medium zucchini
  • 4 tbsp unsalted butter
  • 1½ cup heavy cream
  • 1 cup Parmesan cheese
  • 2 clove garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Using a spiralizer or vegetable peeler, create zucchini noodles from the zucchini; set aside.
  2. Melt butter in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
