Zucchini Noodle Alfredo
A lighter take on a classic, this Zucchini Noodle Alfredo offers creamy indulgence with a fresh vegetable twist.
Ingredients
- 4 medium zucchini
- 4 tbsp unsalted butter
- 1½ cup heavy cream
- 1 cup Parmesan cheese
- 2 clove garlic
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Using a spiralizer or vegetable peeler, create zucchini noodles from the zucchini; set aside.
- Melt butter in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Reduce heat to low and stir in Parmesan cheese until melted and smooth.
- Season the Alfredo sauce with salt and black pepper.
