Apricot Glazed Chicken

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¾ cup apricot preserves
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season lightly with salt and pepper.
  2. In a small saucepan, combine apricot preserves, Dijon mustard, apple cider vinegar, garlic powder, onion powder, 1/4 tsp salt, and 1/8 tsp pepper. Bring to a simmer over medium heat, stirring until smooth, then remove from heat.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden brown.
  4. Pour about half of the apricot glaze over the chicken in the skillet. Transfer the skillet to the preheated oven.
  5. Bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C), basting with remaining glaze halfway through.
  6. Remove from oven, let rest for 5 minutes, then garnish with fresh parsley if desired before serving.
