Apricot Glazed Chicken
Sweet and tangy apricot glazed chicken thighs, baked until tender and caramelized, perfect for a satisfying weeknight meal.
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ¾ cup apricot preserves
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped (optional)
Steps
- Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season lightly with salt and pepper.
- In a small saucepan, combine apricot preserves, Dijon mustard, apple cider vinegar, garlic powder, onion powder, 1/4 tsp salt, and 1/8 tsp pepper. Bring to a simmer over medium heat, stirring until smooth, then remove from heat.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden brown.
- Pour about half of the apricot glaze over the chicken in the skillet. Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C), basting with remaining glaze halfway through.
- Remove from oven, let rest for 5 minutes, then garnish with fresh parsley if desired before serving.
