Ingredients

  • 1½ lb pork tenderloin
  • 8 bacon slices
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ¾ tsp salt
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels.
  2. In a small bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture evenly over the pork tenderloin.
  3. Lay the bacon slices slightly overlapping on a cutting board. Place the seasoned pork tenderloin at one end and carefully roll it up, wrapping the bacon tightly around the pork.
  4. Place the bacon-wrapped tenderloin on a baking sheet. Roast for 25-35 minutes, or until the internal temperature reaches 145°F (63°C) and the bacon is crispy.
  5. Remove from oven and let rest for 5-10 minutes before slicing into medallions.
  6. Garnish with fresh parsley if desired and serve immediately.
