Bacon-Wrapped Pork Tenderloin
Juicy pork tenderloin wrapped in savory bacon, roasted to perfection for an elegant yet simple meal.
Ingredients
- 1½ lb pork tenderloin
- 8 bacon slices
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp black pepper
- ¾ tsp salt
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels.
- In a small bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture evenly over the pork tenderloin.
- Lay the bacon slices slightly overlapping on a cutting board. Place the seasoned pork tenderloin at one end and carefully roll it up, wrapping the bacon tightly around the pork.
- Place the bacon-wrapped tenderloin on a baking sheet. Roast for 25-35 minutes, or until the internal temperature reaches 145°F (63°C) and the bacon is crispy.
- Remove from oven and let rest for 5-10 minutes before slicing into medallions.
- Garnish with fresh parsley if desired and serve immediately.
