Baked Cod
Flaky cod fillets baked to perfection with a simple lemon-herb seasoning, a light and healthy meal.
Ingredients
- 1½ lb cod fillets
- 1 lemon
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried parsley
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat cod fillets dry with paper towels. Place them on the prepared baking sheet.
- In a small bowl, whisk together olive oil, lemon juice from half the lemon, garlic powder, dried parsley, salt, and black pepper.
- Brush the olive oil mixture evenly over both sides of the cod fillets.
- Slice the remaining half of the lemon into thin rounds and place them on top of the cod fillets.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh parsley, if desired, before serving.
