Flaky cod fillets baked to perfection with a simple lemon-herb seasoning, a light and healthy meal.

Ingredients

  • 1½ lb cod fillets
  • 1 lemon
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat cod fillets dry with paper towels. Place them on the prepared baking sheet.
  3. In a small bowl, whisk together olive oil, lemon juice from half the lemon, garlic powder, dried parsley, salt, and black pepper.
  4. Brush the olive oil mixture evenly over both sides of the cod fillets.
  5. Slice the remaining half of the lemon into thin rounds and place them on top of the cod fillets.
  6. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Garnish with fresh parsley, if desired, before serving.
