Baked Cod with Panko Topping
Flaky baked cod topped with a crispy, golden panko crust, a simple yet elegant seafood dish.
Ingredients
- 1½ lb cod fillets
- 1 cup panko breadcrumbs
- 4 tbsp unsalted butter
- ¼ cup fresh parsley
- 1 lemon
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil (optional)
Steps
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat cod fillets dry with paper towels. Season both sides with salt and pepper. Place on the prepared baking sheet.
- In a medium bowl, melt butter. Stir in panko breadcrumbs, chopped parsley, garlic powder, and the zest of half a lemon until well combined.
- Evenly press the panko mixture onto the top of each cod fillet.
- Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the panko topping is golden brown and crispy.
- Serve immediately with fresh lemon wedges.
