Ingredients

  • 1½ lb cod fillets
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • ¼ cup fresh parsley
  • 1 lemon
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat cod fillets dry with paper towels. Season both sides with salt and pepper. Place on the prepared baking sheet.
  3. In a medium bowl, melt butter. Stir in panko breadcrumbs, chopped parsley, garlic powder, and the zest of half a lemon until well combined.
  4. Evenly press the panko mixture onto the top of each cod fillet.
  5. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the panko topping is golden brown and crispy.
  6. Serve immediately with fresh lemon wedges.
