Baked Flounder with Vegetables

Ingredients

  • 1½ lb flounder fillets
  • 4 cup broccoli florets
  • 2 cup carrots
  • 1 red bell pepper
  • 3 tbsp olive oil
  • 1 lemon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Chop carrots into 1/2-inch thick rounds and red bell pepper into 1-inch pieces. In a large bowl, toss broccoli, carrots, and bell pepper with 2 tablespoons olive oil, garlic powder, onion powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Spread the seasoned vegetables in a single layer on one half of the prepared baking sheet. Roast for 15 minutes.
  4. While vegetables roast, pat flounder fillets dry with paper towels. Drizzle with remaining 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Slice lemon into thin rounds.
  5. After 15 minutes, remove the baking sheet from the oven. Arrange flounder fillets on the other half of the baking sheet, placing lemon slices on top of each fillet.
  6. Return to the oven and bake for another 10-15 minutes, or until the fish is opaque and flakes easily with a fork and vegetables are tender-crisp.
  7. Garnish with fresh parsley, if desired, and serve immediately.
