Baked Flounder with Vegetables
A light and healthy one-pan meal featuring flaky flounder baked with tender seasonal vegetables.
Ingredients
- 1½ lb flounder fillets
- 4 cup broccoli florets
- 2 cup carrots
- 1 red bell pepper
- 3 tbsp olive oil
- 1 lemon
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Chop carrots into 1/2-inch thick rounds and red bell pepper into 1-inch pieces. In a large bowl, toss broccoli, carrots, and bell pepper with 2 tablespoons olive oil, garlic powder, onion powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Spread the seasoned vegetables in a single layer on one half of the prepared baking sheet. Roast for 15 minutes.
- While vegetables roast, pat flounder fillets dry with paper towels. Drizzle with remaining 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Slice lemon into thin rounds.
- After 15 minutes, remove the baking sheet from the oven. Arrange flounder fillets on the other half of the baking sheet, placing lemon slices on top of each fillet.
- Return to the oven and bake for another 10-15 minutes, or until the fish is opaque and flakes easily with a fork and vegetables are tender-crisp.
- Garnish with fresh parsley, if desired, and serve immediately.
