Baked Pork Chops with Potatoes

Ingredients

  • 4 bone-in pork chops, 1-inch thick
  • 1½ lb Yukon Gold potatoes
  • 1 yellow onion
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash and cut potatoes into 1-inch cubes. Peel and slice the onion into 1/2-inch wedges.
  3. In a large bowl, toss the potatoes and onions with 2 tablespoons of olive oil, garlic powder, paprika, dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
  4. Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Roast for 15 minutes.
  5. While vegetables roast, pat pork chops dry. Rub them with the remaining 1 tablespoon of olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  6. After 15 minutes, remove the baking sheet from the oven. Push the potatoes and onions to one side and place the pork chops on the empty side of the sheet. Return to the oven and bake for another 20-25 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender and golden.
  7. Let pork chops rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
