Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¾ cup balsamic vinegar
  • ½ cup chicken broth
  • 2 tbsp honey
  • 2 clove garlic
  • 1 tbsp olive oil
  • 1 tsp cornstarch (optional)
  • 1 tbsp water (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Pat chicken breasts dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add balsamic vinegar, chicken broth, honey, and minced garlic to the skillet. Bring to a simmer, scraping up any browned bits from the bottom.
  4. Reduce heat to medium-low and simmer the sauce for 5-7 minutes, or until it has thickened slightly. For a thicker glaze, mix cornstarch with water in a small bowl and stir into the simmering sauce.
  5. Return chicken to the skillet, turning to coat in the balsamic glaze. Cook for another 1-2 minutes to heat through.
  6. Garnish with fresh parsley, if desired, and serve immediately.
