Banh Mi Sandwich
A vibrant and flavorful Vietnamese sandwich featuring marinated pork or chicken, pickled vegetables, fresh herbs, and a creamy spread on a crispy baguette.
Ingredients
- 1 lb pork shoulder
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 2 clove garlic
- 1 tsp lemongrass paste (optional)
- 2 medium carrots
- 1 cup daikon radish
- ½ cup rice vinegar
- ½ cup water
- 2 tbsp sugar
- 4 baguettes
- ½ cup mayonnaise
- ½ bunch cilantro
- 1 jalapeño (optional)
- 1 small cucumber
- 1 tbsp oil
Steps
- Thinly slice pork shoulder (or chicken). Marinate with fish sauce, soy sauce, 1 tbsp sugar, minced garlic, and lemongrass paste (if using) for at least 15 minutes.
- Julienne carrots and daikon radish. In a bowl, combine rice vinegar, water, and 2 tbsp sugar. Add carrots and daikon; let pickle for at least 15 minutes.
- Heat oil in a skillet over medium-high heat. Cook the marinated pork until browned and cooked through, about 5-7 minutes.
- Slice baguettes lengthwise, but not all the way through. Toast lightly if desired. Spread mayonnaise generously on both cut sides of the baguette.
- Fill each baguette with cooked pork, pickled carrots and daikon, fresh cilantro sprigs, cucumber slices, and jalapeño slices (if using).
- Serve immediately and enjoy your homemade Banh Mi!
