Fish Sauce Wings

Crispy, sticky, and savory-sweet, these Vietnamese-inspired wings are coated in a delectable fish sauce glaze.

Ingredients

  • 2 lb chicken wings
  • ½ cup fish sauce
  • ½ cup granulated sugar
  • 4 clove garlic
  • 1 lime
  • ¼ cup water
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 3 cup vegetable oil
  • 1 red chilies (optional)
  • 2 tbsp fresh cilantro (optional)

Steps

  1. Pat chicken wings very dry with paper towels. In a large bowl, toss wings with cornstarch and black pepper until evenly coated.
  2. Heat vegetable oil in a large pot or Dutch oven to 350°F (175°C). Fry wings in batches for 6-8 minutes per batch, until golden brown and cooked through. Remove and drain on a wire rack.
  3. While wings fry, mince garlic. In a small saucepan, combine fish sauce, sugar, water, minced garlic, and the juice of one lime. Bring to a simmer over medium heat, stirring until sugar dissolves.
  4. Continue to simmer the sauce for 5-7 minutes, or until it has thickened slightly and is syrupy.
  5. In a large bowl, add the fried chicken wings. Pour the thickened fish sauce glaze over the wings and toss until every wing is thoroughly coated.
  6. Serve immediately, garnished with sliced red chilies and fresh cilantro, if desired.
