Fish Sauce Wings
Crispy, sticky, and savory-sweet, these Vietnamese-inspired wings are coated in a delectable fish sauce glaze.
Ingredients
- 2 lb chicken wings
- ½ cup fish sauce
- ½ cup granulated sugar
- 4 clove garlic
- 1 lime
- ¼ cup water
- ½ tsp black pepper
- 2 tbsp cornstarch
- 3 cup vegetable oil
- 1 red chilies (optional)
- 2 tbsp fresh cilantro (optional)
Steps
- Pat chicken wings very dry with paper towels. In a large bowl, toss wings with cornstarch and black pepper until evenly coated.
- Heat vegetable oil in a large pot or Dutch oven to 350°F (175°C). Fry wings in batches for 6-8 minutes per batch, until golden brown and cooked through. Remove and drain on a wire rack.
- While wings fry, mince garlic. In a small saucepan, combine fish sauce, sugar, water, minced garlic, and the juice of one lime. Bring to a simmer over medium heat, stirring until sugar dissolves.
- Continue to simmer the sauce for 5-7 minutes, or until it has thickened slightly and is syrupy.
- In a large bowl, add the fried chicken wings. Pour the thickened fish sauce glaze over the wings and toss until every wing is thoroughly coated.
- Serve immediately, garnished with sliced red chilies and fresh cilantro, if desired.
