BBQ Pork Sloppy Joes
A delightful twist on classic sloppy joes, featuring savory BBQ pork piled high on toasted buns and topped with tangy pickled red onions.
Ingredients
- 1 lb pork shoulder
- 2 sweet potatoes
- 1 red onion
- 2 clove garlic
- 1 lime
- 4 hamburger buns
- ¾ cup barbeque sauce
- 1 tbsp hot sauce (optional)
- 6 tbsp ketchup
- 1½ tsp sugar
- 2 tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter (optional)
Steps
- Preheat oven to 450°F (230°C). Cut sweet potatoes into ½-inch wedges, toss with a drizzle of oil, salt, and pepper, then roast for 20-25 minutes until tender.
- Thinly slice ¼ cup of red onion for pickling and finely chop the remaining onion. Mince garlic. Squeeze lime juice into a small bowl.
- In the bowl with lime juice, add sliced onion, ½ tsp sugar, and a pinch of salt; stir to combine and set aside to quick-pickle.
- Heat a drizzle of oil in a large pan over medium-high heat. Add chopped onion, salt, and pepper; cook for 4-5 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
- Add pork to the pan, season with salt and pepper, and cook, breaking it up, for 4-6 minutes until browned and cooked through.
- In a separate bowl, combine BBQ sauce, pickling liquid from the onion, 6 tbsp ketchup, 1 tsp sugar, and ⅓ cup water. Add this mixture to the cooked pork and simmer for 2-3 minutes until the sauce thickens.
- Brush cut sides of hamburger buns with melted butter (if using) and toast in the oven or toaster oven for 3-5 minutes until golden.
- Fill toasted buns with BBQ pork, top with pickled red onion, and add hot sauce if desired. Serve with roasted sweet potato wedges.
