BBQ Pulled Pork Sandwiches

Ingredients

  • 2 lb pork shoulder
  • 1 onion
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup apple cider vinegar
  • ½ cup chicken broth
  • 1½ cup BBQ sauce
  • 4 hamburger buns
  • 1 cup coleslaw (optional)

Steps

  1. Slice the onion and place it at the bottom of a slow cooker. Place the pork shoulder on top of the onions.
  2. In a small bowl, combine garlic powder, paprika, chili powder, salt, and pepper. Rub the spice mixture all over the pork.
  3. Pour apple cider vinegar and chicken broth into the slow cooker.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork is very tender and easily shredded.
  5. Carefully remove the pork from the slow cooker and shred it using two forks. Discard any excess fat.
  6. Return the shredded pork to the slow cooker, add the BBQ sauce, and stir to combine. Cook for another 30 minutes on high.
  7. Serve the BBQ pulled pork warm on hamburger buns, optionally topped with coleslaw.
