Beef and Noodle Casserole

Ingredients

  • 1 lb ground beef
  • 8 oz egg noodles
  • 1 medium onion
  • 2 cloves garlic
  • 14½ oz canned diced tomatoes
  • 8 oz tomato sauce
  • 4 oz cream cheese
  • ½ cup sour cream
  • 1 cup cheddar cheese
  • ½ cup beef broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian seasoning
  • 1 tbsp vegetable oil

Steps

  1. Preheat oven to 375°F (190°C). Cook egg noodles according to package directions, then drain and set aside.
  2. Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
  3. Add chopped onion and minced garlic to the skillet with the beef. Cook until the onion is softened, about 5 minutes.
  4. Stir in diced tomatoes, tomato sauce, beef broth, salt, pepper, and Italian seasoning. Bring to a simmer and cook for 5-7 minutes.
  5. Reduce heat to low, then stir in cream cheese and sour cream until melted and smooth. Remove from heat.
  6. Combine the cooked noodles with the beef and sauce mixture in the skillet. Pour into a 9x13 inch baking dish.
  7. Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
