Beef and Potato Skillet

Ingredients

  • 1 lb Ground beef, 80/20
  • 1½ lb Potatoes, russet
  • 1 Onion, yellow
  • 2 clove Garlic
  • 1 Bell pepper, green
  • 1 tbsp Olive oil
  • ½ cup Beef broth
  • 1 tsp Worcestershire sauce
  • ¾ tsp Salt
  • ½ tsp Black pepper
  • 1 tsp Paprika
  • ½ tsp Dried thyme
  • ½ cup Cheddar cheese, shredded (optional)
  • 2 tbsp Fresh parsley, chopped (optional)

Steps

  1. Dice potatoes into 1/2-inch cubes. Chop onion and bell pepper. Mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  3. Add diced potatoes, chopped onion, and bell pepper to the skillet. Cook for 8-10 minutes, stirring occasionally, until vegetables start to soften.
  4. Stir in minced garlic, salt, black pepper, paprika, and thyme. Cook for 1 minute until fragrant.
  5. Pour in beef broth and Worcestershire sauce. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until potatoes are tender.
  6. Remove lid and increase heat to medium-high. Cook for another 3-5 minutes, stirring occasionally, until most of the liquid has evaporated and potatoes are slightly browned.
  7. If desired, sprinkle with shredded cheddar cheese and cover for 1-2 minutes until melted. Garnish with fresh parsley before serving.
