Beef and Potato Skillet
A hearty one-pan meal featuring seasoned ground beef and tender potatoes, perfect for a quick and satisfying dinner.
Ingredients
- 1 lb Ground beef, 80/20
- 1½ lb Potatoes, russet
- 1 Onion, yellow
- 2 clove Garlic
- 1 Bell pepper, green
- 1 tbsp Olive oil
- ½ cup Beef broth
- 1 tsp Worcestershire sauce
- ¾ tsp Salt
- ½ tsp Black pepper
- 1 tsp Paprika
- ½ tsp Dried thyme
- ½ cup Cheddar cheese, shredded (optional)
- 2 tbsp Fresh parsley, chopped (optional)
Steps
- Dice potatoes into 1/2-inch cubes. Chop onion and bell pepper. Mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add diced potatoes, chopped onion, and bell pepper to the skillet. Cook for 8-10 minutes, stirring occasionally, until vegetables start to soften.
- Stir in minced garlic, salt, black pepper, paprika, and thyme. Cook for 1 minute until fragrant.
- Pour in beef broth and Worcestershire sauce. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, or until potatoes are tender.
- Remove lid and increase heat to medium-high. Cook for another 3-5 minutes, stirring occasionally, until most of the liquid has evaporated and potatoes are slightly browned.
- If desired, sprinkle with shredded cheddar cheese and cover for 1-2 minutes until melted. Garnish with fresh parsley before serving.
