Beef Burrito Bowl
A flavorful and satisfying beef burrito bowl packed with seasoned ground beef, rice, beans, and fresh toppings.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion
- 2 clove garlic
- 2 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- ½ tsp oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup beef broth
- 15 oz canned black beans
- 15 oz canned corn
- 4 cup cooked rice
- 2 avocado (optional)
- 1 cup cherry tomatoes (optional)
- ¼ red onion (optional)
- ¼ cup cilantro (optional)
- 1 lime (optional)
- ½ cup shredded cheese (optional)
- ½ cup sour cream (optional)
Steps
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet with the beef. Cook until softened, about 3-5 minutes.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Add drained and rinsed black beans and corn to the skillet. Cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
- Divide cooked rice among four bowls. Top each with the beef and bean mixture.
- Garnish with desired toppings such as sliced avocado, chopped tomatoes, red onion, cilantro, a squeeze of lime, shredded cheese, or sour cream.
