Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 2 tsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup beef broth
  • 15 oz canned black beans
  • 15 oz canned corn
  • 4 cup cooked rice
  • 2 avocado (optional)
  • 1 cup cherry tomatoes (optional)
  • ¼ red onion (optional)
  • ¼ cup cilantro (optional)
  • 1 lime (optional)
  • ½ cup shredded cheese (optional)
  • ½ cup sour cream (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet with the beef. Cook until softened, about 3-5 minutes.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  5. Add drained and rinsed black beans and corn to the skillet. Cook for 5-7 minutes, allowing flavors to meld and sauce to thicken slightly.
  6. Divide cooked rice among four bowls. Top each with the beef and bean mixture.
  7. Garnish with desired toppings such as sliced avocado, chopped tomatoes, red onion, cilantro, a squeeze of lime, shredded cheese, or sour cream.
