Taco Salad

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • ¼ cup water
  • 6 cup romaine lettuce
  • 1 cup cherry tomatoes
  • 15 oz black beans
  • 15 oz corn
  • 1 cup cheddar cheese
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)
  • 1 avocado (optional)
  • 2 cup tortilla chips (optional)

Steps

  1. Brown ground beef in a skillet over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
  2. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid has reduced and the meat is well coated.
  3. While the beef cooks, chop lettuce and halve cherry tomatoes. Rinse and drain black beans and corn.
  4. Divide lettuce among four bowls. Top with seasoned ground beef, tomatoes, black beans, corn, and shredded cheddar cheese.
  5. Serve with sour cream, salsa, sliced avocado, and crushed tortilla chips, if desired.
