Taco Casserole
A hearty and flavorful casserole layering ground beef, beans, corn, and cheese for an easy weeknight meal inspired by tacos.
Ingredients
- 1 lb ground beef
- ½ cup onion
- 2 tbsp taco seasoning
- ½ cup water
- 15 oz black beans
- 15 oz corn
- 4 oz tortilla chips
- 1½ cup shredded cheddar cheese
- ½ cup salsa
- ½ cup sour cream (optional)
- 2 tbsp green onions (optional)
Steps
- Preheat oven to 375°F (190°C). Brown ground beef and diced onion in a large skillet over medium heat; drain any excess fat.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until liquid is mostly absorbed.
- Spread half of the crushed tortilla chips in the bottom of a 9x13 inch baking dish.
- Layer the beef mixture over the chips, then top with black beans, corn, and half of the shredded cheese.
- Cover with the remaining tortilla chips and cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Serve hot with salsa and optional sour cream and green onions.
