Taco Casserole

A hearty and flavorful casserole layering ground beef, beans, corn, and cheese for an easy weeknight meal inspired by tacos.

Ingredients

  • 1 lb ground beef
  • ½ cup onion
  • 2 tbsp taco seasoning
  • ½ cup water
  • 15 oz black beans
  • 15 oz corn
  • 4 oz tortilla chips
  • 1½ cup shredded cheddar cheese
  • ½ cup salsa
  • ½ cup sour cream (optional)
  • 2 tbsp green onions (optional)

Steps

  1. Preheat oven to 375°F (190°C). Brown ground beef and diced onion in a large skillet over medium heat; drain any excess fat.
  2. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until liquid is mostly absorbed.
  3. Spread half of the crushed tortilla chips in the bottom of a 9x13 inch baking dish.
  4. Layer the beef mixture over the chips, then top with black beans, corn, and half of the shredded cheese.
  5. Cover with the remaining tortilla chips and cheese.
  6. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  7. Serve hot with salsa and optional sour cream and green onions.
