Smothered Burrito

A hearty and satisfying burrito filled with seasoned ground beef and beans, then generously smothered in a rich red sauce and melted cheese.

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 clove garlic
  • 15 oz canned refried beans
  • 4 large flour tortillas
  • 1½ cup shredded cheddar cheese
  • 16 oz red enchilada sauce
  • 2 tbsp taco seasoning
  • 1 tbsp vegetable oil
  • ½ cup sour cream (optional)
  • 2 tbsp chopped cilantro (optional)

Steps

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat oil over medium heat. Add ground beef and onion; cook until beef is browned and onion is softened, breaking up the beef with a spoon. Drain any excess grease.
  3. Stir in minced garlic and taco seasoning, cooking for 1 minute more until fragrant. Remove from heat and stir in the refried beans.
  4. Lay out tortillas. Spoon an equal amount of the beef and bean mixture into the center of each tortilla, then sprinkle with a portion of the shredded cheese. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
  5. Place the burritos seam-side down in a 9x13 inch baking dish. Pour the red enchilada sauce evenly over the burritos, ensuring they are well-covered.
  6. Sprinkle the remaining shredded cheese over the sauce. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the burritos are heated through.
  7. Serve hot, garnished with sour cream and cilantro if desired.
