Smothered Burrito
A hearty and satisfying burrito filled with seasoned ground beef and beans, then generously smothered in a rich red sauce and melted cheese.
Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 clove garlic
- 15 oz canned refried beans
- 4 large flour tortillas
- 1½ cup shredded cheddar cheese
- 16 oz red enchilada sauce
- 2 tbsp taco seasoning
- 1 tbsp vegetable oil
- ½ cup sour cream (optional)
- 2 tbsp chopped cilantro (optional)
Steps
- Preheat oven to 375°F (190°C).
- In a large skillet, heat oil over medium heat. Add ground beef and onion; cook until beef is browned and onion is softened, breaking up the beef with a spoon. Drain any excess grease.
- Stir in minced garlic and taco seasoning, cooking for 1 minute more until fragrant. Remove from heat and stir in the refried beans.
- Lay out tortillas. Spoon an equal amount of the beef and bean mixture into the center of each tortilla, then sprinkle with a portion of the shredded cheese. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
- Place the burritos seam-side down in a 9x13 inch baking dish. Pour the red enchilada sauce evenly over the burritos, ensuring they are well-covered.
- Sprinkle the remaining shredded cheese over the sauce. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the burritos are heated through.
- Serve hot, garnished with sour cream and cilantro if desired.
