Beer Cheese Soup

Ingredients
- 4 tbsp unsalted butter
- 1 medium yellow onion
- 2 clove garlic
- ¼ cup all-purpose flour
- 4 cup chicken broth
- 1 cup milk
- 12 fl oz lager beer
- 8 oz sharp cheddar cheese, shredded
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce
- ½ tsp salt
- ¼ tsp black pepper
- 2 cup pretzel bites (optional)
Steps
- Melt butter in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in flour and cook for 2 minutes, stirring constantly, to create a roux.
- Gradually whisk in chicken broth and milk until smooth. Bring to a simmer, stirring occasionally, then reduce heat to low.
- Pour in the beer and stir. Add the shredded cheddar cheese in batches, stirring until each batch is fully melted and incorporated before adding more.
- Stir in Dijon mustard, Worcestershire sauce, salt, and pepper. Heat gently until warmed through, but do not boil after adding cheese.
- Serve hot, optionally garnished with pretzel bites.
